This Egyptian herb (Corchorus olitorius) is popular not only in Egypt but throughout the Levant. The leaves look something like spinach or sorrel, but their taste is unique. They are available fresh, frozen or dried at Middle Eastern markets. Do not substitute spinach, because you will lose the plant’s distinctive flavor and also the special glutinous texture it gives to soups. The soup of the same name is very popular in Egypt.
