These noodles come in a variety of widths and are sold both fresh and dried. The Chinese curly noodles shown below, excellent for soup, are just one type. To cook them, bring 5 quarts water to a rolling boil, add the noodles and cook for 2 minutes (for fresh noodles) to 7 minutes (for dried noodles). Cook only until the strands can be pulled apart with chopsticks; then drain.
