Candied peel appears in supermarkets during the winter, but it is easy to make at home. The following recipe takes about 20 minutes’ preparation time and 40 minutes’ cooking time, and makes 1 cup of candied peel.
- 4 oranges
- 4 cups sugar
- 2 cups water
- 4 tablespoons fresh lime juice
- Wash the oranges, peel them, cut the peel into slivers, and blanch (see “Orange Peel, Blanched”).
- In a saucepan, combine the blanched peel, sugar and water. Bring to a boil, reduce the heat to medium and simmer for 20 minutes. Add the lime juice and simmer 15 to 20 minutes more.
- Drain the peel, spread it on parchment paper and let it dry for a few hours. Then sprinkle with confectioners’ sugar if desired and store in a plastic bag in the refrigerator for weeks or in the freezer for months.
