Pumpkin & other Winter Squash

Pumpkin or squash flowers (above) make a delicious tempura. Round winter squashes such as pumpkin, and butternut and acorn squashes are all prepared the same way, as shown at right with a butternut squash. With a heavy cleaver, slice the squash crosswise into 2-inch rings (1 and 2). Remove the seeds with a spoon (3) and use the cleaver to peel the squash (4). Cut each squash into 1-inch cubes (5), rinse and drain the cubes, and pat them dry.
