Wash the rose petals thoroughly and pat dry. Line a cookie sheet with ¼ cup super-fine sugar. Beat the egg white lightly with a fork until frothy. Use a brush to paint both sides of the rose petals with egg white. Arrange petals on a cookie sheet and coat both sides of the rose petals evenly with ¼ cup sugar. Allow to dry on the bed of sugar at room temperature for at least 1 hour, until the sugar forms a crisp coat.
