After meat has been sautéed or roasted, the pan or roasting dish is de-greased and then a liquid is poured into the pan to dissolve the coagulated and caramelised pan juices. This is the basis of many sauces and gravies. The liquid could be water, stock or alcohol, e.g. wine or brandy.
