A term used when working with powdered gelatine. The gelatine is sprinkled over a specified amount of liquid and left to sit for 4–5 minutes. During this period, the gelatine soaks up the water and becomes ‘spongy’ in texture—hence the name. Gelatine is easier to dissolve if it is sponged before melting.
