Chaga is the mushroom that grows on the birch tree. It’s loaded with antioxidants, and many claim that it fights cancer. It has a flavor reminiscent of a very mild coffee with chocolaty undernotes. To brew it, first dry the mushroom until hard, then grind it or smash it into chunks. Simmer in water for 20 minutes to 1 hour. It’s delicious with any nut milk, especially hazelnut milk, and honey or maple syrup.
Chaga Sauce: Reduce the chaga tea until it’s very dark and strong, and thin it with maple syrup or honey.
