Star fruit (carambola) slices (gold means ripe); kiwi slices (cut in half, gently scoop out of the fuzzy skin, and slice); partially sliced strawberries (hulls attached); cut peaches or apples; julienned apple “matchsticks” (with peel intact at the top). When making in advance, store these delicate fruits in a lemon-lime beverage in the refrigerator to prevent browning.
