Strutto, or sugna as it is called in dialect, is pork fat that has been rendered and then left to cool so that it solidifies. In the past pork fat was a cheap and plentiful medium for frying and baking. In these more health-conscious times, its use is restricted to a few dishes where its flavour is considered essential.
