Elvers/eels. Baby eels, or elvers, are freshwater fish which reproduce in the deep waters of the Sargasso Sea. Much valued all over Spain, they are at their best cooked in the Basque Country al pil-pil, which is a Christmas treat. They are also served in salads, at room temperature or chilled.
