The Chinese excel at the art of drying fish and seafood, and these ingredients are a feature in much of their cooking, where they add strength of flavour. Dried anchovies impart an intense flavour when used in stocks and soups. Available in packets from Asian food stores, they should be stored in an airtight container once opened.
