An edible tree fungus, sometimes referred to as the cloud ear mushroom, which has a subtle mushroom flavour and a crunchy texture that absorbs the flavours with which it is cooked. Black wood fungus is available fresh in small punnets from some greengrocers and supermarkets, or in its dried form from Asian food stores.
