Dried Chinese Black

These fragrant black mushrooms, related to the Japanese shiitake, impart a gentle mushroom flavour and also take on the flavours with which they are cooked. Available at Asian food stores, they are a staple in Chinese cooking. Reconstitute in warm water for 30 minutes before using.
