The tiny black seeds from the herbaceous lemon basil plant (known as ‘manglak’ in Thailand) are used primarily in Asian sweet drinks and desserts as they have a cooling effect on the body and aid digestion. They are also often served with young, green coconut flesh. The seeds are odourless with an oily, slightly pungent flavour. They are usually soaked in water for 15 minutes before use, during which time they develop a gelatinous coating. Available: Asian food stores.
