Mastic is the sap or resin from an acacia native to the Mediterranean and comes in either crystal or powder form. The crystals need to be pounded in a mortar and pestle before use. Mastic provides a subtle liquorice flavour and is used in Greek and Middle Eastern cooking, particularly in ice-cream, bread and sweet biscuits. Available: Middle Eastern and Greek food stores.
