Paprika is a fine reddish powder made by grinding dried, mild-flavoured members of the chilli family. It has a sweet and pungent flavour and is used to season savoury dishes specific to the food of Spain (where it is referred to as pimiento) and Hungary. The Spanish pimiento is available in two styles: sweet and hot/smoky. Both tend to be hotter and more earthy than the milder, sweeter Hungarian paprika, which is considered by some to be of superior quality. Because it is purchased already ground, buy paprika or pimiento in small quantities to ensure freshness. Available: widely.
