To melt chocolate

Coarsely chop the chocolate and place it in a stainless steel bowl over a pot of simmering water. Do not let the water touch the bottom of the bowl. Stir occasionally until the chocolate is melted and smooth. White chocolate is very susceptible to heat. Chop white chocolate finely so that it melts more evenly, and make sure to stir it often while it is melting.
