Sweet butter does not contain salt, and should be used in baking because it gives you control of the salt in recipes and has a purer taste. The shelf life of sweet butter is shorter than that of salted butter, so be sure to freeze it if you are not going to use it soon after you buy it. Some grocery stores sell sweet butter in the frozen food section. Always store butter well wrapped in the refrigerator, as it picks up odors easily.
