Alkali

A substance with a bitter, sometimes soapy flavor. Alkalinity is measured on the pH scale; alkaline substances have a pH higher than 7. The few alkaline substances used in food production include baking soda or powder, calcium hydroxide for the nixtamalization of corn in Mexican cuisine, or sodium hydroxide for color enhancement in pretzels.
