If you like buri and hamachi, kampachi is another fish you should try. It looks much like its relative yellowtail and is similarly flavorful but less fatty.
Kampachi swim in the warm currents off Japan, Korea, China, and Hawaii. These fish grow to twice the size of yellowtail, more than 6 feet long. A two-to three-year-old fish, about 20 inches, is the most flavorful.
Wild kampachi has always been relatively rare and therefore expensive in Japan, but after World War II, farmed kampachi became affordable and popular. Wild kampachi tastes best in summer, when its fattier cousin the yellowtail is out of season. Farmed kampachi is available year-round, but it tastes a little greasy and less appealing.
