A chile pepper grown exclusively in the Basque village of Espelette, it is known for its complex flavor profile of smoky, sweet, and fruity. It was originally brought to Spain from Mexico in the sixteenth century. The government limits its export, making it rare and expensive outside of France. It can be found online and at specialty food shops. Substitute Spanish paprika or a pinch of cayenne pepper.
