I didn’t think it was possible to fall in love with an onion. Asparagus, a peach fresh from the tree, and even that first (or last) handful of raspberries of the year, but onions? Do me a favour. Yet here they are, Egyptian walking onions, in this book.

I like onions in that reliably useful, cosy-jumper kind of a way, they provide the backdrop to many of my favourite dishes. And yet, when I want some of that intense, oniony flavour up front I would have previously opted for shallots or spring onions any day.
