A dark brown sugar made from the sap of several palm trees, it is available in a solid block form. If you cannot obtain palm sugar, you can substitute a dark brown sugar, however this will change the flavour of the finished dish. Coconut sugar is similar to palm sugar but it is made only from the sap of the coconut palm. If it is unavailable, use palm or dark brown sugar instead.
