Also known as blacan, shrimp paste is a strong-flavoured seasoning made from dried prawns (shrimp) which is available in block form. You need to roast shrimp paste before you use it. To do this, wrap the required amount of shrimp paste in aluminium kitchen foil and place it in a moderate oven at 160°C (315°F) for about 10 minutes. Remove and cool before use.
