If the specific flavor of imported Parmigiano-Reggiano makes a difference, that is what is called for in the ingredients list. If a less expensive version of Parmesan is fine, the recipe will call for Parmesan. To shred Parmesan (or other cheeses), use the large holes on a box grater; to grate it, use the small holes on a box grater, a Parmesan grater, or a Microplane grater. To shave Parmesan, use a swivel-bladed vegetable peeler or a cheese plane.
