Mustard seeds are the king of the masala dabba (spice box) and are used in almost every curry and dal dish in India’s western and southern regions. It’s fun to watch them pop and fizz when they are added to hot oil, but it’s important to remember to work quickly; otherwise, the seeds will burn in the hot oil, which can ruin the dish entirely.
