Exposure to air can speed the oxidation process that breaks down anchovies, so rather than haphazardly covering the open tin with cling wrap or foil, transfer the remaining fish to a small, resealable, airtight container, like a spice jar. Pour a little extra olive oil into the jar so the fish are completely submerged. Store in the refrigerator and try to use up within a week.
