If you’re planning to simmer a fillet of cod or halibut in a spicy tomato sauce later in the week, set aside some clam brine to add to the sauce. It will provide a savory flavor base that a lot of mild white fish don’t have on their own. You can also add a splash to a pot of mussels simmering in white wine. You won’t notice the clam flavor, but the brine will bring out all the mussels’ best qualities.
