This can be the leftover half of a roast chicken in your refrigerator or a good hunk of Roquefort, but I love the combo of a jammy egg or a Beet-Pickled Egg and a can of fish. Oily fish like mackerel, sardines, and anchovies can add richness if you’re dressing your salad with a lighter vinaigrette, and salmon or trout can add smokiness, instead of bacon.
