Use about 2 Tbsp. My go-to here is a classic store-bought mayo, but there are plenty of possibilities. This is a great opportunity to use leftover homemade aioli. For an extra umami boost, you can opt for Kewpie mayo, which LA’s Konbi uses in their Tuna Fish Sandwich. Or, to keep the flavors bright and tangy, try a little crème fraîche here.
