Smoked seafood, like oysters, mussels, and mackerel, can gain a lot from a few shakes of a really bright and peppery hot sauce. As someone who grew up in Buffalo, I’m partial to Frank’s RedHot, an essential ingredient of buffalo wings, but I can also get behind Tabasco. The Spanish company Espinaler makes an “appetizer sauce,” which delivers a heady dose of paprika and vinegar and is great sprinkled over mussels and potato chips, like the Vermouth Hour Potato Chips with Mussels, Olives & Piparras.
