This is a young miso that contains less salt and its fermentation time is quite short. It has a sweet and mild flavour. In soup, it works well with root vegetables and winter vegetables or pork. Meat is only very rarely added to miso soup, but an exception is made for pork. Since this miso is very mild-tasting, it is good to add some shichimi (7 spice), ginger or a little citrus zest to lift the flavour.
