Drying of Mushrooms

Select firm medium size mushrooms. Clean them thoroughly but do not wash them. Spread them on a sheet and keep in the sunshine for 2 or 3 days. Turn them from time to time so that they may dry out evenly. After three days, thread them on long strings and hang up again in the sunshine or in a well-aired room. When they are thoroughly dried, keep them tightly covered.
