Dry mushrooms until they are very hard and will crumble. Pound them in a mortar to a fine powder. Sift through a fine sieve. Excellent in meat sauces, roasts and poultry.
Unless you hunger after the earth, you will not likely pick your mushrooms. In season you will get them fresh from your grocer and he will have them for you all year round in cans. They are ready to use just as they come from the can—no washing or peeling is necessary. Because they are already washed and cooked, they are equivalent to approximately double their weight in fresh mushrooms. An 8 ounce can is equal to a pound of fresh mushrooms, making them economical to use. For your convenience we list the sizes of packs of mushrooms.
