Stuart Gillies is a highly acclaimed British chef. After training in the UK, he spent a year in Rome and three years in Stockholm. He then moved to Daniel’s in New York City to work under Daniel Boulud. On returning to the UK, he worked at Le Caprice in London before joining Angela Hartnett as head chef at The Connaught and opening the Gordon Ramsay-owned Boxwood Café in May 2003. Stuart was chef director at the reopened Savoy Hotel from October 2010, and also at Plane Food. He has appeared on BBC One’s Saturday Kitchen and competed in the second series of The Great British Menu.
