Glutinous rice, also known as sweet rice, is an opaque short-grain rice that becomes sticky and chewy when cooked. This rice needs to be soaked for at least 4 hours or overnight. The best steaming method is to steam the grains over boiling water—not in a rice cooker or pot (see Lotus Leaf Rice). It can also be wrapped in bamboo leaves and boiled to make Dragon Boat Festival Rice Parcels. Despite its name, glutinous rice, like all rice, is gluten-free.
