Dhooni is an artificial way of infusing a charred coal smoky aroma to a dish that is not cooked over coal. To give dhooni, burn a piece of coal on the flame until it’s red hot. Place a piece of foil/bread on the cooked dish and place the coal piece on it. Pour 2-3 drops of oil on the coal. Quickly cover the pan with a lid to trap the smoke that will start to seep. Let the smoky aroma infuse in the dish. Discard the coal and foil after 10 minutes.
