galestro, the Italian name for the friable rock of the marl-like soil that characterizes many of the best vineyard sites in chianti classico, and also the name of a Tuscan white wine based on trebbiano created at the end of the 1970s to soak up the surplus of white grapes that developed when producers began to reduce the amount of Trebbiano used in their chianti. It has largely faded although antinori, under its Santa Cristina label, still produces a version.
