Verdelho, which also tends to be planted on the cooler north side of the island, ripens more easily than Sercial and therefore lends itself to producing a medium-dry wine with Baumé readings of between 1.5° and 2.5° after fortification. With age, the wines develop an extraordinary smoky complexity while retaining their characteristic tang of acidity.
