mature, tasting term for a fine wine that seems to have enjoyed sufficient ageing for it to have reached the peak of its potential. In practice, it is also used by the most polite, or determinedly optimistic, tasters to describe wines that are past that point. Any hint of orange at the rim of a red wine suggests maturity.
