Rosé des Riceys

Rosé des Riceys, rare, still, pink wine made in the commune of Riceys in the Aube département, the southern end of the champagne region. This dark, rose-coloured wine is made by careful saignée of Pinot Noir grapes, by only a a handful of producers. It can be one of France’s more serious rosés. Like Champagne’s still red wine, Bouzy Rouge (see champenois, coteaux), part of its appeal may be its name.
