Weissherbst is by German law a rosé wine at least 95% of which is made by direct pressing of a single red wine grape variety named on the label (spätburgunder and portugieser are especially common). In practice, the 5% red wine permitted to achieve a desired colour is rarely added since consumers expect Weissherbst to be very pale. The term is also used in German-speaking switzerland for very much the same style of wine. See also schillerwein.
