Žilavka, the most famous grape variety in Herzegovina (see bosnia and herzegovina). This characterful variety makes distinctive whites that manage to combine high alcohol with high acidity and a certain nuttiness of flavour. The Žilavka made around the inland town of Mostar is particularly prized. It is not, however, necessarily made exclusively from Žilavka grapes. Žilavka is also found in croatia, the Republic of macedonia, and serbia.
