Rice vinegar is a vinegar made, not surprisingly, from rice! Although it is sometimes the case that other grains are included as well. Japanese rice vinegar is usually weaker in acidity than, for example, white vinegar (usually made from grapes) so make sure you taste the finished dish and check the taste.
