Tahini is a creamy paste made from ground sesame seeds. Used throughout the Middle East, the Aegean and Japan, versions of it are sold by supermarkets and health food shops. In Japan they produce the regular pale variety, and a strangely delicious black version, made from black unhulled sesame seeds. The latter make great ice creams.
