A recent addition to the domestic kitchen has been non-stick silicone moulds and silicone mats. These are very easy to use, maintain and store, and are readily available from good kitchenware shops. Silicone mats are ideal for baking choux pastry, meringues and biscuits. If using under tart rings you will need to allow a little extra time for your tart base to cook as the heat is conducted differently through the silicon.
