I like to have hand whisks of various sizes: a medium one is good for whipping, while a larger balloon whisk is best for folding in ingredients. Hand blenders are very handy for blitzing fruit, making sauces and soups and, those with a whisk attachment, are great for whipping cream as long as you take care not to overwhip.
