  • About
Warning: This sauce can get spicy. Named after the Sichuan district of Pidu (formerly Pixian) in Chengdu, this paste is typically made from fermented beans, chile peppers, wheat flour, and salt. The coarse, deep red paste adds a complex, savory undertone to dishes when cooked, with a slow build of heat.
