Unlike hollow onion chives, which are typically used in Western cooking, Chinese chives, or garlic chives, are flat-leaved. And just like how onion chives are slightly delicate versions of onions, garlic chives have a light garlic flavor. When used in bulk, however, that punch is strong. You can use both the leaves and the flowers, the latter if you want a bigger kick.
